Morning, morning, morning, everyone!

I hope you are all doing wonderfully on this fresh new Monday and the beginning of yet another week.

Wow! This weekend was soooo short. I swear I blinked and Monday was standing at the door like, “Good morning! Miss me?” No, actually. I did not.

But hey, we are here, we are functioning (mostly), and that’s what counts!

So, with the Monday small talk out of the way, let’s get straight down to business.

Today’s star of the show is… Herby Chickpea Clouds!

Now listen, guys… I woke up this morning feeling unusually creative. I don’t know what happened. Maybe my brain had a little extra battery today because I thought, “You know what? Let me surprise you with something!”

And honestly… WOW. I just wanna tell you that this meal will make your year.

So let me stop talking and show you exactly how to make these delicious little clouds of herby chickpea goodness!

How to make Herby Chickpea Clouds

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1 egg
  • 3 tbsp plain flour
  • ¼ cup crumbled feta
  • 2 tbsp finely chopped spring onion
  • 1 tbsp chopped fresh parsley or coriander
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Zest of ½ lemon
  • Salt and black pepper
  • 1–2 tbsp cooking oil

Method:

  1. Mash the chickpeas roughly with a fork. Leave a few small pieces intact for texture.
  2. Add the egg, flour, feta, spring onion, herbs, garlic powder, paprika, lemon zest, salt and pepper.
  3. Mix until you have a soft mixture that holds together. If it feels too wet, add another spoonful of flour.
  4. Shape into small, slightly flattened rounds.
  5. Heat a little oil in a pan over medium heat.
  6. Cook the chickpea rounds for about 3–4 minutes per side, until beautifully golden and crisp.
  7. Serve immediately with a spoonful of plain yoghurt and a squeeze of lemon.

My favourite way to eat them:

*Put a few on a plate with cool lemony yoghurt, sliced avocado and fresh cucumber. Or eat them straight from the plate with your fingers.
