How are we all doing today? I hope everyone’s keeping warm and wrapped up nice and cosy!

Now… I have officially arrived for our daily food meeting, so there’s no time for long speeches. Let’s get straight to today’s delicious agenda!

Our VIP guest for today is… Crispy Chicken & Bacon Tortilla Rolls!

I can already hear some of you saying, “Sis… didn’t we just have bacon the other day?”

And my answer is… yes, we did! But listen, bacon is one of those ingredients that refuses to be boring. There are so many tasty ways to use it, and honestly, anything that saves us from standing in front of the stove for hours deserves a standing ovation!

Trust me on this one, my people… this recipe is an absolute winner. I won’t spoil all the fun—I just know you are going to love it!

Now, come with me and let’s make some magic in the kitchen.

How to make Crispy Chicken & Bacon Tortilla Rolls

Ingredients:

  • 4 large flour tortillas
  • 2 cooked chicken breasts, shredded
  • 150 g bacon, cooked until crispy and chopped
  • 1 cup grated cheddar cheese
  • 2 tbsp cream cheese
  • 2 tbsp mayonnaise
  • 1 small carrot, grated
  • 2 spring onions, finely sliced
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • Salt to taste
  • Oil for shallow frying

For dip:

  • Garlic Yoghurt Dip
  • ½ cup plain yoghurt
  • 1 tsp lemon juice
  • 1 clove garlic, crushed
  • Pinch of salt
  • Chopped parsley

Method:

  1. In a bowl, mix the shredded chicken, crispy bacon, cheddar, cream cheese, mayonnaise, carrot, spring onions, paprika, garlic powder, pepper, and salt.
  2. Lay a tortilla flat and spread some of the filling along one edge.
  3. Roll it up tightly like a wrap.
  4. Repeat with the remaining tortillas.
  5. Heat a little oil in a frying pan.
  6. Fry each roll for about 2–3 minutes per side until golden and crispy.
  7. Slice each roll into halves or bite-sized pieces.
  8. Mix all the dip ingredients together and serve alongside the crispy rolls.

Serve with:

  • Fresh garden salad
  • Potato wedges
  • Coleslaw
  • Sweet chilli sauce or the garlic yoghurt dip
