How to make Crispy Chicken Skin & Pap Family Meal Budget: R50 ( The maize meal is the main cost)Chicken skin is already included in chicken purchase (no extra cost) PAP INGREDIENTS: 2 cups maize meal 4 cups water 1 teaspoon salt 1 tablespoon cooking oil or butter (optional) CHICKEN SKIN INGREDIENTS: Chicken skin (cut them in pieces) from 1 packet of chicken pieces ½ teaspoon salt Black pepper (to taste) Optional: pinch of curry powder or paprika 1–2 tablespoons cooking oil (only if needed) Method: Prepare the pap: Bring water and salt to a boil. Slowly add maize meal while stirring to avoid lumps.Stir until thickened. Cover and simmer on low heat for 15–20 minutes. Add a little hot water if softer texture is needed. Prepare the chicken skin: Remove chicken skin from chicken pieces. Pat dry well. Place in a cold pan (no oil needed at first). Heat slowly over medium-low heat so fat renders out. Continue cooking until golden and crispy. Add oil only if necessary during cooking. Season and finish: Remove crispy skin from pan. Season immediately with salt, pepper, and optional spice. Drain excess fat on paper towel. Serve: Spoon soft pap onto a plate. Add crispy chicken skin on the side or on top. Serve warm as a full family meal.
