No long speeches, no unnecessary meetings — let’s get straight to today’s agenda. And our star for today is… Apple & Cheddar Fold-Ups! Today I told myself, “You know what? Do less of the yada yada and let these people experience more of the mhhhhmmmmmm.” Because honestly, I’m tired of talking so much that I accidentally spoil the surprise before you even get a chance to taste it. So, with that being said, let me show you how we are bringing today’s little star to life! How to make Apple & Cheddar Fold-Ups Ingredients: 2 medium flour tortillas 1 small apple, thinly sliced ½ cup grated cheddar cheese ¼ small onion, thinly sliced 1 tsp butter 1 tsp honey 1 tsp mild mustard ¼ tsp dried thyme Pinch of salt Black pepper Method: Melt the butter in a pan over medium heat. Add the sliced onion and cook for about 3 minutes, until softened and lightly golden. Add the apple slices and thyme. Cook for another 2 minutes, just until the apple softens slightly but still has some bite. Remove from the heat and stir the honey and mustard through the apple-onion mixture. Lay a tortilla flat and put half the cheddar over one side. Spoon half of the apple mixture on top, then add the remaining cheese. Fold the tortilla over to create a half-moon. Toast it in a dry pan over medium-low heat for about 2–3 minutes per side, pressing gently, until crisp and golden and the cheese is completely melted. Repeat with the second tortilla.
