Happy CHOOSE DAY, fam!

First things first, thank you for choosing me because, clearly, I also chose you, and as our Lord Jesus Christ chose all of us. Amen!

I hope you are doing well on this… mhhmmm… very cold day. I don’t know what the weather is doing where you are, but where I am? Yoh. It’s giving “stay under the blanket”.

Anyway, enough about the cold. We are here for something much more important — food. And because nobody came here to watch me talk about food while we are hungry, let’s get straight to today’s star.

Parmesan Mushroom French Toast!

One thing I love about toast is that you can have it pretty much whenever you want. Breakfast? Absolutely. Lunch? Why not? Feeling hungry at 10pm? Toast has no judgement.

And today, we are taking things up a notch with some delicious mushrooms and Parmesan.

Now, because I’m already hungry and I’m honestly struggling to wait any longer to taste what I have just made, let me stop talking and show you how to make your own!

How to make Parmesan Mushroom French Toast

Ingredients:
For the French toast:

  • 4 thick slices of bread
  • 2 eggs
  • ½ cup milk
  • ¼ cup grated Parmesan
  • ½ tsp garlic powder
  • ½ tsp dried thyme
  • Salt and black pepper
  • 1 tbsp butter

For the creamy mushrooms:

  • 250 g mushrooms, sliced
  • 1 small onion, finely sliced
  • 2 garlic cloves, minced
  • ½ cup cream
  • 2 tbsp grated Parmesan
  • 1 tsp butter
  • ½ tsp dried thyme
  • Salt and black pepper
  • Fresh parsley

Method:

  1. Whisk the eggs, milk, Parmesan, garlic powder, thyme, salt and pepper together.
  2. Dip each slice of bread into the mixture, making sure both sides are coated without completely soaking the bread.
  3. Melt the butter in a frying pan and cook the bread for about 2–3 minutes per side, until beautifully golden.
  4. Remove the French toast and keep it warm.
  5. In the same pan, melt the teaspoon of butter and sauté the onion until soft.
  6. Add the garlic and mushrooms and cook until the mushrooms become golden and juicy.
  7. Pour in the cream and sprinkle in the Parmesan and thyme.
  8. Simmer for 2–3 minutes, stirring until the sauce becomes silky and coats the mushrooms.
  9. Season with black pepper and a little salt.
  10. Place the golden French toast on a plate and generously spoon the creamy mushrooms over it.
  11. Finish with fresh parsley and an extra little sprinkle of Parmesan.
