Now listen… winter has officially clocked in for duty. The blankets are refusing to let us go, our toes are permanently cold, and suddenly everyone is drinking tea like it’s medicine. But don’t worry fam, because while winter came to freeze us… we came prepared to EAT!

So without doing long stories, let’s jump straight into today’s meeting and very serious agenda.

The superstar, celebrity, main character, and Oscar winner of today’s kitchen show is… Potato Stuffed Pancake Pillows!

Heeeh guys! This recipe? Yoh. It will hug your stomach like a loving auntie after church. I know it looks innocent and simple, like it minds its own business… but don’t be fooled. Two bites in and suddenly you are full, happy, and questioning why expensive restaurants even exist.

So before hunger starts speaking in tongues on our behalf, come closer fam and let me show you exactly how we are bringing today’s delicious star to life!

How to make Potato Stuffed Pancake Pillows

Ingredients:
Pancakes:

  • 1 cup flour
  • 1 egg
  • 1 cup milk
  • Pinch of salt
  • 1 tablespoon oil

Filling:

  • 2 potatoes, peeled & cubed
  • ½ cup grated cheese
  • 1 tablespoon butter
  • 2 tablespoons milk
  • Salt & black pepper
  • 1 teaspoon garlic powder

Method:

  1. Cook the potatoes: Boil potatoes until soft.
    Drain and mash with:
    *Butter
    *Milk
    *Cheese
    *Garlic Powder
    *Salt & Pepper
    Mash until creamy.
  2. Make the pancakes:
    Mix:

    *Flour
    *Egg
    *Milk
    *Salt
    *Oil
    Cook thin pancakes in a lightly oiled pan.
  3. Fill them: Add spoonfuls of creamy potato filling into the center of each pancake.
    Fold into little square “pillows”.
  4. Toast them: Place the folded pancakes back into a lightly buttered pan. Cook briefly on both sides until golden and warm.

    Extra tip:
    *Serve with a little sour cream or plain yogurt on the side for an extra creamy touch
