But through all the coughing, sneezing, and dramatic sighing, God has been good to me, and for that I’m truly grateful.

Now that we are all gathered here for our sacred daily food meeting, let’s stop wasting time before someone’s stomach starts making background music.

Today’s superstar on the menu is: Crispy Potato Nests with Creamy Corn Filling.

How to make Crispy Potato Nests with Creamy Corn Filling

Ingredients:
Potato Nests:

  • 3 potatoes or more
  • 1 egg
  • Salt & black pepper
  • 1 tablespoon butter or oil

Filling:

  • 1 cup sweetcorn
  • 2 tablespoons cream cheese
  • 2 tablespoons milk
  • ½ cup grated cheese
  • 1 teaspoon garlic
  • Salt & black pepper

Method:

  1. Make the potato nests: Grate the potatoes and squeeze out excess water.
    Mix with:
    *Egg
    *Salt
    *Pepper
    Grease a muffin tray lightly. Press potato mixture into the muffin spaces to create little “nests.” Bake at 190°C until golden and crispy.
  2. Prepare the creamy filling: In a pan, combine:
    *Sweetcorn
    *Cream Cheese
    *Milk
    *Garlic
    *Salt & Pepper
    Cook until creamy and warm. Add grated cheese and stir until melted.
  3. Fill the nests: Remove crispy potato nests carefully. Spoon creamy corn filling into each one.
  4. Final touch: Return to the oven for 3–5 minutes just until slightly bubbly.

    Extra tip:
    *Sprinkle parsley or paprika on top for a cosy golden finish
