Happy CHOOSE DAY, fam! First things first, thank you for choosing me, just as I chose you, and just as our Lord Jesus Christ chose us all. Amen! Now, I know it’s been a hot minute since we last gathered in this kitchen, and trust me, I KNOW y’all have questions. Some of you might even be thinking I packed my bags, abandoned the kitchen, and left you to figure out your meals on your own. But relax, fam! The rumours are greatly exaggerated! You see, when you are in the business of food, sometimes you need a little time to experiment, create, and develop recipes that are healthy, beneficial, and delicious enough to make your taste buds sing hallelujah! Greatness takes time, people! But then, enough courtroom drama. Let’s get down to the delicious business! Our star of the day is…Honey-Lime Halloumi with Pineapple Salsa! Fam, all I’m asking is that you give this beauty a chance, make it for yourself, and fall in love with it shamelessly. Because honestly, if your taste buds start dancing, please don’t ask them to sit down! Now, grab your ingredients, bring your appetite, and let me show you how to make this little piece of deliciousness right in your own kitchen. How to make Honey-Lime Halloumi with Pineapple Salsa Ingredients:For the golden halloumi: 200 g halloumi cheese 1 tsp olive oil 1 tsp honey ½ tsp paprika A pinch of black pepper For the pineapple salsa: 1 cup fresh pineapple, diced into small cubes ¼ red pepper, finely chopped 1 tbsp finely chopped red onion 1 tbsp fresh coriander, chopped Juice of ½ lime A tiny pinch of chilli flakes (optional) Method: Prepare your salsa: Place the pineapple, red pepper, red onion and coriander in a bowl. Add the lime juice and chilli flakes, if using. Mix gently and set aside. Prepare the cheese: Cut the halloumi into thick slices. Pat them dry with a paper towel, then sprinkle lightly with paprika and black pepper. Make it golden: Heat the olive oil in a non-stick frying pan over medium heat. Add the halloumi slices and cook for approximately 2 minutes on each side, until golden brown. Add the honey: Drizzle the honey over the cheese during the final 30 seconds of cooking, turning the slices gently to coat them. Watch carefully so the honey doesn’t burn. Bring everything together: Arrange the golden halloumi on a plate and spoon the fresh pineapple salsa over and around it. Finish with a little magic: Squeeze a little extra lime juice over everything and scatter a few coriander leaves on top.
